Tall Blonds

For the last couple of weeks my husband Dave has been gone to Michigan on business and I have been challenging myself with a month of lions. August has the horoscope sign of the lion but I am not doing it because of that, I am equating my lions with a month of the Lion of God.  Now, what does this have to do with tall blonds? Absolutely nothing.😁 I will soon be adding the lions to my website in the form of originals and prints....stay tuned.

Since Dave was gone, my daughter, Lisa, and I had a great chance to catch up on cooking and movies. She is tall and blond so I thought I would title the blog today after her. I missed Dave terribly but we really had fun......

She and I have both always loved giraffes because they too are tall and blond. When she was little (and tall) her room was decorated with giraffes.

This is one of my favorite cakes cakes. I am gluten and dairy free but you can make this with regular flour as well. 

Gluten Free Lemon-Zucchini Cake
Preheat oven to 350 and grease and flour an 13"x 9" cake pan.
2 Cups Sugar
2 Cups Shredded Zucchini
1 Cup Oil
3 Large Eggs
2 1/2 Cups Flour ( I use King Arthur's 1 for 1 Gluten Free Flour )
1 teaspoon Baking Soda
1/4 teaspoon Baking Powder
1/4 teaspoon Salt
1/4 Cup Lemon Juice
1 teaspoon Lemon Zest
1 Tablespoon Lemon Extract

Beat eggs until thick and then mix in sugar, zucchini and oil . Combine dry ingredients and add to the wet mixture. Do not overbeat. Mix in Lemon ingredients. Pour in to prepared pan. 
Bake until golden brown and a toothpick inserted in the middle comes out clean. 30-40 minutes. Let cool completely before frosting.
I make a simple powdered sugar frosting with stick of softened butter, 4 cups of powdered sugar and a teaspoon of lemon extract.
