Noisy Neighbors


Along with all the rain comes a feast of worms and crawdads. The birds don't really care about being wet....they just love the moveable feast. Our city is a bird sanctuary and I think most of them hang out at our house. Cardinals, Mocking Birds, Jays, Doves, Hawks, Owls and lots more but the crows make the most noise.

We have a large pecan tree in the front yard and in the Fall when the yard is full of pecans we have to hustle to salvage enough for a few pies because the crows invite ALL their friends.

Best Pecan Pie Recipe

1 Cup Sugar

1 1/2 Cup Light Corn Syrup

4 Eggs

1/4 Cup Melted Butter

1 1/2 teaspoon Vanilla (I use Vanilla Paste)

2 Cups Coarsely Chopped Pecans

1 Unbaked Deep Dish Pie Crust (or 2 regular frozen)

Bring sugar and corn syrup to boil for 2 or 3 minutes stirring constantly. Set aside to cool while preparing the other ingredients. Beat eggs until thick and frothy then slowly pour the syrup into the eggs stirring constantly. Stir in the butter and vanilla. Add pecans. Pour into crust(s) Bake for 45 to 60 minutes until set. I am gluten/dairy free and so I used 2 frozen G/F piecrusts. Be sue you distribute the pecans evenly if using 2.
