Lazy Hazy Days of Summer

Down here in Texas when you wake up in the A.M. it is usually already in the 80's. Not that this summer has been as hot as it normally is, we have had so much rain that it has cooled off to the high nineties. Most days it feels a bit steamy from all the moisture in the ground as it evaporates. My chickens don't seem to mind as long as their water containers stay clean and full and your expectation of them is low.

The gulf freeway is torn up (nothing new here) and being enlarged all the way to Texas City so going to Galveston is not my favorite thing to do right now......too much traffic. On weekends the roadwork doesn't seem to deter the main thrust of people from heading to the beach. It backs up all the way up here by us, but they still show up every weekend.

Winter has always been my favorite time of year for the beach. It isn't really that cold and I love to walk along the sand and breathe in the salt air from waves. The pelicans look positively prehistoric as they fly above the water. My brother Chris has found a great place to pick up driftwood. I plan to incorporate some of the really special pieces into my artwork. We already have some great ideas that I think will be beautiful. I will post pictures here on the blog as well as my website once we perfect them.

I do love crab cakes in the summertime. I am allergic to gluten so I make mine with Schar gluten free table crackers and they are sooooo good. No one knows the difference because they are heavy on crab meat and light on filler.

Gluten Free Crab Cakes

1/4 Cup Mayo (I use Dukes)

1 Teaspoon fresh chopped parsley

2 teaspoons Worchester Sauce

2 teaspoons dijon mustard

1 teaspoon Old Bay seasoning

1 large egg ( 2 if small from my girls)

1 teaspoon lemon juice plus more for serving

pinch of salt

1 # lump crab meat

2/3 cup crushed saltines (I use Schar gluten free table crckers)

Melted Butter

Whisk together the first eight ingredients in a large bowl. put the crab meat on top of mixture and on top of that put the crushed crackers. Gently and carefully fold together so that you do not break up the crab meat. Cover and refrigerate for at least an hour.

Preheat oven to 450F

Grease a baking sheet with lots of butter or spray or use a baking mat. 

Scoop in mounds (about 6) without pressing down ....you can use your hands to compact them so there are no lumps sticking out. Brush with melted butter.

Bake for 12-14 minutes or until lightly browned around the edges. 

Drizzle fresh lemon juice when serving. Yummy !!
